  • 1 (3.4-ounce) box instant pistachio pudding
  • 1 cup 7 Up (can substitute club soda)
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 (3.4-ounce) box instant pistachio pudding
  • 1/2 cup whole milk
  • 1 (8-ounce) container frozen whipped topping
  • 1 1/2 cups sweetened flaked coconut
  • Maraschino cherries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the white cake mix and instant pistachio pudding.
  3. Add 7 Up, vegetable oil, and eggs; mix for about 2 minutes on medium speed until well combined.
  4. Pour the batter into a greased 9×13 inch baking pan and bake for approximately 32 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow the cake to cool completely before frosting.
  6. For the frosting, whisk together another box of pistachio pudding with whole milk until smooth, then fold in the frozen whipped topping.
  7. Spread the frosting evenly over the cooled cake, then sprinkle sweetened flaked coconut on top and garnish with maraschino cherries.
