  • 4 medium beets (roasted or steamed)
  • 1 large cucumber (English or Persian)
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh dill (or mint/parsley)
  • 2 tablespoons red apple vinegar (or lemon juice)
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 teaspoon honey or maple syrup

Instructions

  1. Preheat the oven to 400°F (200°C) if roasting beets. Wash and wrap each beet in foil, then roast for about 60 minutes until tender.
  2. Slice the cucumber into desired shapes. Once cooled, peel the roasted beets and cut into bite-sized pieces.
  3. In a small bowl, whisk together vinegar (or lemon juice), olive oil, salt, pepper, and optional sweetener.
  4. In a large mixing bowl, combine beets, cucumber slices, crumbled feta, and fresh herbs. Pour the dressing over it all and toss gently to combine.
  5. Serve immediately or chill for 30 minutes to enhance flavors.
