  • 1 cup pearl barley
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 ½ cups vegetable broth (or chicken broth)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Rinse the pearl barley under cold water in a fine-mesh strainer until the water runs clear. Drain thoroughly.
  2. In a medium saucepan over medium heat, heat olive oil and 1 tablespoon of butter. Add the rinsed barley and toast for about 5-7 minutes until golden brown.
  3. Stir in the chopped onion and cook for about 3 minutes until softened. Add minced garlic and thyme; cook for another minute until fragrant.
  4. Pour in the vegetable broth along with salt and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 25-30 minutes until the barley is tender and most liquid is absorbed.
  6. Remove from heat but keep covered for an additional 5 minutes. Fluff gently with a fork after stirring in the remaining tablespoon of butter.
  7. Serve warm, garnished with chopped fresh parsley.
