  • 1.5 Cups 1 Inch chunks of Boneless Chicken (breast)
  • 1/2 Cup Pineapple Juice (using canned pineapple)
  • 2 Tbsp Brown Sugar
  • 1/2 tsp Black Pepper Powder
  • 2 Tbsp Soy Sauce (low sodium)
  • 1 tsp Rice Vinegar
  • 1/4 tsp Paprika
  • 1 tsp Fresh Ginger, minced
  • 1 tsp Fresh Garlic, minced
  • 1/2 Tbsp Cornstarch
  • 1/2 Tbsp Water
  • 1/2 tsp Salt
  • 1 tsp Garlic Powder
  • 1/2 Tbsp Cornstarch
  • 1 medium Onion, cut into bite-sized pieces
  • Red/Green Bell Peppers, cut into bite-sized pieces
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 3 Tbsp Sesame Oil (for frying)
  • Sesame seeds and spring onion greens for garnish

Instructions

  1. In a mixing bowl, combine chicken pieces with salt, garlic powder, black pepper, and cornstarch. Marinate for at least 30 minutes.
  2. In another bowl, mix pineapple juice, brown sugar, soy sauce, rice vinegar, paprika, ginger, garlic, cornstarch, and water to create the sauce.
  3. Heat sesame oil in a skillet over medium heat. Add marinated chicken and stir-fry until cooked through. Remove from skillet.
  4. In the same skillet, add onion and bell peppers; stir-fry for 3-4 minutes until tender-crisp.
  5. Return cooked chicken to the skillet and pour the sauce over everything. Simmer until the sauce thickens.
  6. Serve hot over rice or noodles.
