  • ½ cup water
  • ¾ cup granulated sugar
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 2 teaspoons vanilla extract
  • 260 g ladyfingers
  • Freeze-dried strawberries for dusting

Instructions

  1. Prepare the strawberry syrup by cooking strawberries with water over low heat, mashing them, and straining to extract juice. Add sugar and lemon juice, then simmer until thickened.
  2. In a bowl, mix mascarpone cheese with sugar and vanilla until smooth. Whip heavy cream separately until stiff peaks form, then fold into the mascarpone mixture along with cooled strawberry syrup.
  3. Dip ladyfingers briefly in the syrup and layer in a dish, alternating with the mascarpone filling. Refrigerate for at least 6 hours or overnight.
  4. Before serving, dust with freeze-dried strawberry powder and garnish with sliced strawberries.
