  • 2 tablespoons cornstarch
  • 1 teaspoon butter
  • 9-inch baked tart crust (pâte sucrée or pâte sablée)
  • 1 pint fresh strawberries
  • 2 tablespoons strawberry or apricot jam

Instructions

  1. Prepare the vanilla mixture by combining vanilla seeds with 3 tablespoons sugar and heating with 1 cup of milk in a saucepan.
  2. In a stand mixer, whisk egg yolks and slowly add remaining sugar until light and fluffy.
  3. Whisk cornstarch into remaining milk until smooth; mix into the egg yolk mixture once the milk reaches a low boil.
  4. Cook the combined mixture in a saucepan over low heat until thickened.
  5. Remove from heat, stir in butter, and chill the pastry cream.
  6. Assemble the tart by spreading chilled pastry cream over the crust and topping it with sliced strawberries arranged in circles.
