  • 1 tablespoon olive oil
  • 1 medium red onion (diced)
  • 5 garlic cloves (minced)
  • 2 teaspoons dried dill
  • ½ cup parsley leaves (finely chopped)
  • ¼ cup green onions (finely chopped)
  • 2 teaspoons lemon zest
  • ½ teaspoon black pepper
  • 1½ cups crumbled feta cheese
  • About 20 sheets phyllo pastry (defrosted)
  • 6 tablespoons unsalted butter (melted)

Instructions

  1. Heat olive oil in a large skillet over medium heat; sauté diced red onions for about 5 minutes until softened.
  2. Add minced garlic and dried dill; cook for an additional 5 minutes until fragrant. Remove from heat and let cool.
  3. Squeeze excess moisture from defrosted spinach and add it to the cooled onion mixture along with parsley, green onions, lemon zest, black pepper, and feta cheese; mix well.
  4. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Roll out phyllo pastry on a clean surface; cut into strips about 2½ inches wide.
  6. Layer two sheets of phyllo brushed with melted butter; place one tablespoon of filling at one corner and fold into triangles until fully wrapped.
  7. Arrange triangles on the prepared baking sheet; cover with a damp towel while assembling the remaining pastries.
  8. Bake for 20–25 minutes until golden brown and crispy; cool slightly before serving.
