  • 1 jar (16 ounces) roasted red peppers, drained
  • 1/2 cup oil-packed sun-dried tomatoes, drained
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons honey
  • 4 cloves garlic, smashed
  • 2 tablespoons lemon juice
  • 2 teaspoons smoked paprika
  • 2 small potatoes, very thinly sliced
  • 4 (6-8 ounce) salmon fillets
  • Kosher salt and black pepper, to taste

Instructions

  1. Preheat your oven to 425°F.
  2. Fold four large pieces of parchment paper in half.
  3. In a blender, combine roasted red peppers, sun-dried tomatoes, olive oil, honey, garlic, lemon juice, smoked paprika, salt, and pepper. Blend until smooth.
  4. On one side of each parchment piece, layer thinly sliced potatoes seasoned with salt and pepper. Place one salmon fillet on top and spoon sauce over each fillet.
  5. Fold the parchment over to seal each packet securely.
  6. Place packets on a baking sheet and bake for 15-20 minutes until potatoes are tender.
  7. Carefully open packets to serve warm with tzatziki and garnish with fresh herbs.
