  • 2 tablespoons salted butter
  • 1 pound boneless chicken breasts or thighs, cubed
  • 2 teaspoons Cajun seasoning
  • 1 yellow onion, sliced
  • 2 poblano peppers, chopped
  • 3 cloves garlic, minced
  • 1 pound short cut pasta
  • 2 cups milk
  • 2 ounces cream cheese
  • 1/2 cup ranch dressing
  • 1 cup grated parmesan cheese

Instructions

  1. In a large pot over medium-high heat, melt the butter. Add cubed chicken and Cajun seasoning; cook for about 5 minutes until fully cooked. Remove chicken and set aside.
  2. In the same pot, add sliced onion, chopped poblano peppers, minced garlic, and additional Cajun seasoning. Sauté until vegetables are soft.
  3. Add short cut pasta and 2 cups of water; stir frequently until pasta is al dente (approximately 8 minutes).
  4. Lower heat and stir in milk, cream cheese, ranch dressing, and parmesan cheese until creamy.
  5. Return cooked chicken to the pot and mix well to combine all ingredients.
  6. Serve immediately with extra parmesan and parsley if desired.
