  • 1/2 cup panko breadcrumbs
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Zest of 1 lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine ground chicken, panko breadcrumbs, feta cheese, red onion, dill, parsley, egg, minced garlic, oregano, lemon zest, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 18-20 meatballs (approximately 1.5 inches each).
  3. Preheat oven to 400°F (200°C) and place meatballs on a parchment-lined baking sheet. Bake for 15-20 minutes until golden brown and cooked through (165°F / 74°C).
  4. For the yogurt sauce: mix Greek yogurt with grated cucumber, lemon juice, dill, garlic, salt, and pepper in a separate bowl.
