  • ½ cup vegetable oil
  • 1 cup sour cream or plain Greek yogurt
  • 2 large eggs
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tsp vanilla extract
  • 1½ cups fresh blueberries
  • 1 cup powdered sugar
  • 2–3 tbsp fresh lemon juice (for glaze)
  • 1 tsp lemon zest (optional, for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, whisk the flour, baking powder, and salt together.
  3. In another bowl, mix the vegetable oil, sugar, sour cream (or yogurt), eggs, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Combine wet and dry ingredients gently until just mixed; avoid overmixing.
  5. Toss blueberries in 1 tablespoon of flour and fold them into the batter.
  6. Pour into the prepared loaf pan and bake for 55–65 minutes until a toothpick comes out clean.
  7. Cool for 15 minutes before glazing with a mixture of powdered sugar and lemon juice.
