  • 1 cup uncooked orzo pasta
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic
  • 1 small red onion
  • 1 (14 oz) can diced tomatoes
  • 2 ½ cups low sodium chicken broth
  • Juice and zest of 1 large lemon
  • ½ cup Kalamata olives
  • Fresh parsley and oregano for garnish

Instructions

  1. Cut the chicken into bite-sized pieces; mince the garlic and chop the onion.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the chicken until golden; remove from skillet.
  3. Add remaining oil and sauté onion until translucent. Stir in garlic for an additional minute.
  4. Pour in tomatoes, broth, lemon juice, and zest. Bring to a simmer, then add orzo.
  5. Cook uncovered for about 20-25 minutes until orzo is tender.
  6. Return chicken to skillet with olives; mix gently and heat through.
  7. Garnish with parsley and oregano before serving.
