  • 1 small Minced onion
  • 2 cloves Garlic
  • 1 large Egg
  • 1/2 cup Feta cheese
  • 2 tbsp Greek seasoning
  • 2 cups Cooked rice (white or brown)
  • 1 large European cucumber
  • 1 cup Plain yogurt (Greek)
  • Fresh herbs (mint and dill)

Instructions

  1. Preheat your oven to 400°F (200°C). In a mixing bowl, combine ground lamb or beef, minced onion, garlic, egg, feta cheese, Greek seasoning, and salt. Mix until just combined.
  2. Shape the mixture into meatballs about 1 inch in diameter and place on a lined baking sheet. Bake for 15 minutes until cooked through.
  3. For the tzatziki sauce, mix together garlic, grated cucumber (drained), yogurt, mint, dill, salt, and pepper in a separate bowl. Chill until serving.
  4. In another bowl, combine cooked rice with lemon juice and salt; stir gently.
  5. To serve, place lemon rice in bowls topped with meatballs and tzatziki sauce. Add diced tomatoes and cucumbers for freshness.
