  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup white rice
  • 0.5 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 0.5 cup coconut milk (optional, for cooking rice)
  • 0.25 cup fresh cilantro, chopped
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 0.5 teaspoon red chili flakes (optional)
  • 2 lime wedges
  • 0.25 cup cashews (optional)

Instructions

  1. Marinate chicken pieces in soy sauce, brown sugar, ginger, and garlic for at least 20 minutes.
  2. While the chicken marinates, prepare the pineapple and vegetables.
  3. Cook rice according to package instructions.
  4. Mix glaze ingredients: soy sauce, brown sugar, rice vinegar, sesame oil, and cornstarch.
