  • 1½ tbsp unsalted butter
  • 2 oz kataifi
  • 4 oz pistachio cream
  • 1 tbsp tahini
  • pinch salt
  • 6 oz ice cream (pistachio or your choice)
  • 16 oz milk chocolate, chopped or chips
  • ¼ cup refined coconut oil

Instructions

  1. Thaw kataifi for 2 hours; finely chop.
  2. In a pan, melt butter over medium heat; toast kataifi until golden (8-10 mins).
  3. Mix cooled kataifi with pistachio cream, tahini, and salt; fill ice cream bar mold about â…“ full.
  4. Insert sticks and freeze for 30 minutes.
  5. Soften ice cream slightly and fill molds until full; freeze for at least 2 hours.
  6. Melt chocolate with coconut oil; cool to room temperature.
  7. Dip bars into chocolate coating; let them harden on parchment paper.
  8. Decorate with additional toppings as desired.
