  • 2 cups fresh pineapple, cut into 1-inch chunks
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 green onions, thinly sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons brown sugar
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the cubed chicken with salt and pepper.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 4-5 minutes until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add more oil if needed, then sauté the diced red bell pepper for about 2 minutes. Stir in minced garlic and grated ginger; cook for another 30 seconds until fragrant.
  4. Add the fresh pineapple chunks, cooking for about 3 minutes until slightly caramelized.
  5. In a small mixing bowl, combine soy sauce, rice vinegar, and brown sugar; stir until mixed thoroughly.
  6. Pour the sauce into the skillet with vegetables and bring to a simmer. Return the cooked chicken to the pan, tossing everything to coat with sauce.
  7. Allow to simmer for about 2-3 minutes until the sauce thickens slightly.
  8. Garnish with sliced green onions before serving hot.
