  • 12 slices white bread
  • 1 English cucumber
  • 8 ounces cream cheese (softened)
  • 1/4 cup mayo
  • 2 tablespoons fresh dill (minced)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper (to taste)

Instructions

  1. In a mixing bowl, blend softened cream cheese, mayo, minced dill, lemon juice, garlic powder, and salt until smooth.
  2. Peel the cucumber in stripes and slice it into thin rounds using a mandoline or sharp knife.
  3. Trim the crusts from the bread and spread about 1 tablespoon of the cream cheese mixture on one slice.
  4. Layer with cucumber slices and sprinkle with fresh pepper and additional dill if desired. Top with another slice of bread and cut into triangles or squares.
