  • 1/2 cup Quick Oats
  • 1 cup Mini Chocolate Chips
  • 1 1/4 cups Crushed Cadbury Mini Eggs (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together unbleached flour, baking soda, and kosher salt. Gradually add this dry mixture to the wet mixture until just combined.
  5. Fold in quick oats, mini chocolate chips, and 1 cup of crushed Cadbury Mini Eggs until evenly distributed.
  6. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet about two inches apart.
