  • 2 medium zucchini, sliced lengthwise
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil, for garnish

Instructions

  1. Preheat the oven to 190C (375F) and lightly grease a baking dish.
  2. Slice zucchini lengthwise and layer them in the baking dish, sprinkling with oregano.
  3. Spread half of the ricotta over the zucchini, then add half of the marinara sauce. Repeat layers.
  4. Top with shredded mozzarella.
  5. Cover with foil and bake for 25-30 minutes, then uncover and bake for an additional 10-15 minutes until golden and bubbly.
  6. Let cool briefly before serving with fresh basil.
