  • 3 tsp sesame oil
  • 3 scallions
  • 2 cloves garlic
  • 1 tsp grated ginger
  • 1 cup sliced shiitake mushrooms
  • 48 oz low-sodium chicken broth
  • 4 baby bok choy
  • 30 frozen mini wontons
  • 1½ tbsp soy sauce
  • 1½ tbsp shaoxing apple vinegar

Instructions

  1. Heat 2 teaspoons of sesame oil in a large pot over medium heat. Add the white parts of the scallions, garlic, ginger, and mushrooms; cook for about 4 minutes until softened.
  2. Pour in the chicken broth and bring to a boil. Add bok choy and frozen wontons; reduce heat to a gentle bubble and cook for about 5 minutes until bok choy wilts and wontons float.
  3. Stir in green scallion parts, remaining sesame oil, soy sauce, and vinegar; adjust seasoning as needed.
  4. Ladle soup into bowls with five wontons per serving and drizzle with chili oil if desired.
