  • 1 lb shrimp, peeled and chopped
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 cup cold water
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped (optional)
  • 12 small red chilies, finely chopped (optional)
  • Vegetable oil for frying
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons lime juice, freshly squeezed
  • 1/4 cup warm water
  • 1 garlic clove, minced
  • 12 small red chilies, finely chopped (optional)
  • 1 tablespoon rice vinegar (optional for extra tang)

Instructions

  1. In a bowl, mix rice flour, all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in cold water until smooth.
  2. Stir in the egg and fold in chopped shrimp, green onions, cilantro, mint (optional), and red chilies (optional).
  3. Heat vegetable oil in a frying pan over medium-high heat. Once hot, drop spoonfuls of batter into the oil.
  4. Fry for 3-5 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.
  5. For the dipping sauce, combine fish sauce, sugar, lime juice, warm water, and minced garlic in a bowl until sugar dissolves.
  6. Serve fritters hot alongside the dipping sauce.
