  • 1/2 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups all-purpose flour, spooned & leveled
  • 1/3 cup natural unsweetened cocoa powder
  • 1/4 cup dry hot cocoa mix
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons milk, any kind (dairy or nondairy)
  • 1011 large vegan marshmallows, cut in half
  • 8 ounces semi-sweet chocolate, finely chopped

Instructions

  1. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  2. Add in the egg and vanilla extract; mix until well combined.
  3. In a separate bowl, whisk together flour, cocoa powder, hot cocoa mix, baking soda, and salt. Gradually combine with wet ingredients.
  4. Chill the dough for at least 1 hour.
  5. Preheat oven to 350°F (175°C) and line baking sheets.
  6. Scoop dough into balls and place on prepared sheets.
  7. Press half a vegan marshmallow onto each cookie before returning to the oven for an additional 2 minutes.
  8. Cool cookies on a wire rack before drizzling melted chocolate on top.
