Ingredients

  • Vegan block butter
  • Light brown soft sugar
  • Golden syrup
  • Ground ginger
  • Ground cinnamon
  • All-purpose flour
  • Icing sugar (for royal icing)
  • Aquafaba (or lemon juice)

Instructions

  1. In a saucepan over low heat, melt vegan butter, light brown sugar, golden syrup, and treacle until smooth.
  2. Whisk in the spices and baking soda until combined.
  3. Gradually stir in flour until no dry flour remains. Wrap dough in clingfilm and refrigerate for 2 hours.
  4. Roll out dough on a floured surface to desired thickness and cut shapes with cookie cutters.
  5. Chill cut-out cookies for 15 minutes before baking them at 180°C (350°F) for 8-12 minutes until edges are slightly browned.
  6. Cool on racks before decorating with royal icing made from icing sugar, aquafaba, and lemon juice.
