  • All-purpose flour

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Blend cookies in a food processor until finely crushed; mix with melted vegan butter and press into the baking pan. Bake for 10 minutes and let cool.
  3. Cook diced apples with brown sugar, cinnamon, and cornstarch over medium heat until tender (5–7 minutes) and set aside.
  4. For the crumble topping, combine flour, brown sugar, oats, chopped nuts, cinnamon, and melted vegan butter until crumbly.
  5. Blend soaked cashews with silken tofu, maple syrup, vegan yogurt, lemon juice, cornstarch, vanilla extract, and salt until smooth.
  6. Assemble by layering half the cheesecake filling on the cooled crust, followed by the apple filling and remaining cheesecake filling topped with crumble.
  7. Bake for about 60 minutes; allow to cool before refrigerating overnight.
