  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • Optional: sea salt

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer or with a hand mixer, cream together cold butter, light brown sugar, and granulated sugar until creamy.
  4. Add the cold egg and vanilla extract; mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture along with chopped chocolate and chocolate chips; mix on low speed until just incorporated.
  6. Using a large cookie scoop, divide the dough into ten balls and place them on the prepared cookie sheets.
  7. Bake for 12 to 13 minutes until edges turn golden brown. Sprinkle with sea salt if desired and let cool.
