  • 1 tablespoon minced garlic
  • 2 large carrots (peeled and sliced)
  • 1/3 cup diced sun-dried tomatoes
  • 2 tablespoons olive oil
  • 4 cups low sodium chicken broth
  • 1 can (15 ounces) cannellini beans (drained and rinsed)
  • 3 cups shredded rotisserie chicken
  • 2 cups spinach
  • 1 teaspoon dried thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon Italian seasoning
  • 11 1/2 teaspoons salt (start with 1 and add more as needed)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Sauté diced onion for 2-3 minutes until translucent; add sliced carrots and cook for another 3 minutes.
  3. Stir in minced garlic and sauté until fragrant (about 1 minute).
  4. Add sun-dried tomatoes; sauté for another 1-2 minutes.
  5. Pour in chicken broth, cannellini beans, herbs, salt, pepper, and red pepper flakes; stir well.
  6. Optional: Blend about 1 cup of the soup for creaminess before returning it to the pot.
  7. Mix in shredded chicken and bay leaves; simmer for at least 15 minutes.
  8. Discard bay leaves; add spinach until wilted before serving.
