  • 2 turkey thighs
  • 3 cups rice
  • 2 large tomatoes
  • 1½ red bell peppers
  • 1 green bell pepper
  • 1 habanero
  • 1 chicken seasoning cube
  • Garlic and onion (for seasoning)
  • Oil for frying

Instructions

  1. Debone and chop turkey thighs; season with garlic powder, onion powder, paprika, chili pepper, chicken seasoning cube, and salt.
  2. Create turkey stock by simmering reserved bones with chopped onions, carrots, garlic, ginger, chicken seasoning cube, salt, and water for 15 minutes.
  3. Blend red bell peppers, tomatoes, habanero, and half a green pepper until chunky.
  4. Strain the stock; rinse rice under cold water.
  5. Combine rinsed rice with stock and water in a pot; cook until soft.
  6. Fry seasoned turkey pieces in oil until golden brown; remove from pan.
  7. Sauté onions and minced garlic in the same pan; add blended pepper mix and cook for 8-10 minutes.
  8. Mix in fried turkey pieces and cooked rice; stir to combine thoroughly.
