Ingredients

  • Cornbread (One 9×13 inch pan)
  • Turkey Bacon (12 slices, about 12 ounces)
  • Onions (2 large, chopped)
  • Celery (4 stalks, chopped)
  • Fresh sage (2 tablespoons, chopped)
  • Fresh thyme (2 teaspoons)
  • Chicken stock (2 & 1/2 cups)
  • Eggs (2 large)
  • Apple cider vinegar (1/4 cup)

Instructions

  1. Tear cornbread into bite-sized chunks and allow to dry overnight on baking sheets.
  2. Preheat your oven to 400°F and bake cornbread for about 10 minutes until slightly dried.
  3. Cook turkey bacon in a skillet until crispy; transfer to a towel-lined plate.
  4. Sauté onions and celery in the same skillet until soft, then add fresh herbs.
  5. In a bowl, combine dried cornbread with sautéed vegetables and turkey bacon.
  6. Add melted butter and whisk together chicken stock with eggs; pour over the stuffing mixture.
  7. Transfer to a greased baking pan, top with cold butter, cover with foil, and bake at 350°F for 30 minutes.
  8. Remove foil and bake at 450°F for another 20 minutes until crispy.
