  • 500g cooking apples (e.g., Bramleys)
  • 500g eating apples (e.g., Galas)
  • 75g golden syrup
  • 75g soft light brown sugar
  • 150g cold diced butter
  • 225g plain flour
  • 75g rolled oats
  • 150g demerara sugar
  • 1/2 Teaspoon vanilla extract
  • 1 tablespoon apple juice
  • 1/2 Teaspoon ground cinnamon (optional)

Instructions

  1. For the toffee sauce, combine golden syrup, soft light brown sugar, butter, vanilla extract, double cream, and water in a saucepan. Simmer until smooth and pourable.
  2. In a mixing bowl, combine flour, oats, salt, and cold diced butter. Rub together until crumbly; stir in demerara sugar.
  3. Preheat oven to 180C/350F.
  4. Cook sliced cooking apples with sugar and cinnamon over low heat for about 5 minutes until softened; transfer to a baking dish.
  5. Pour cooled toffee sauce over the apples and sprinkle crumble mixture on top.
  6. Bake for 30-40 minutes until golden brown.
