  • 1 handful of almonds (or your preferred nuts, roughly chopped)
  • 8 garlic cloves (thinly sliced)
  • 1/2 teaspoon Aleppo pepper or red chili flakes (optional for a hint of heat)
  • 3 ounces (85 g) feta cheese, crumbled
  • 1/3 cup fresh parsley (chopped)
  • Fresh bread (for serving)

Instructions

  1. Prepare the oil infusion by gently warming 1/2 cup olive oil with thyme in a small saucepan for 5 minutes; remove from heat.
  2. Sauté sliced garlic in the remaining olive oil over medium heat until golden, then add chopped almonds and toast for an additional 2-3 minutes.
  3. In a food processor, blend crumbled feta cheese, sautéed garlic, nuts, and thyme-infused oil until smooth but slightly chunky. Season with Aleppo pepper if desired.
  4. Transfer to a bowl, garnish with chopped parsley, and serve with fresh bread.
