3 ripe bananas
â…“ cup coconut sugar
¼ cup maple syrup
¼ cup non-dairy milk
2 cups oat flour
â…“ cup vegan chocolate chips (optional)
¼ cup chopped walnuts (optional)
2 tsp vanilla extract
1 tsp apple cider vinegar
3 tbsp coconut oil (melted)
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
½ tsp nutmeg
½ tsp salt
Instructions
Preheat your oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
In a large bowl, mash the bananas and whisk in coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar until well combined.
In another bowl, mix the oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in vegan chocolate chips and walnuts if using.
Pour the batter into the prepared loaf pan and sprinkle with extra chocolate chips or walnuts if desired.
Bake for 60-65 minutes or until a toothpick inserted comes out clean.
Allow the bread to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely before slicing.
