  • 4 Bell Peppers (any color)
  • 2 cups Cooked Chicken (or ground turkey, beef, shrimp, or tofu)
  • 1/2 cup Teriyaki Sauce
  • 1 cup Pineapple Chunks
  • 1 cup Cooked Rice (or quinoa/cauliflower rice)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a mixing bowl, combine cooked chicken, teriyaki sauce, pineapple chunks, and cooked rice until well mixed.
  4. Fill each pepper generously with the mixture and top with cheese if desired.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 5 minutes for cheese melting.
  6. Let cool slightly before garnishing with fresh herbs and serving.
