  • 1.5 lbs beef short ribs
  • 10 cups water
  • 1 whole yellow onion (with skin if organic)
  • 2 green onions or 1 Korean leek
  • 2 thick slices of ginger
  • 2 tablespoons chopped garlic or 56 whole cloves
  • 1 tablespoon soy sauce
  • 1.5 teaspoons sea salt
  • 1/2 medium radish (quarter into thin slices)

Instructions

  1. Gather all ingredients and chop garlic and radish.
  2. In a large pot, combine beef short ribs with water, onion (with skin), green onions or leek, ginger slices, and optional green onion roots. Bring to a boil over medium-high heat.
  3. Reduce heat to low and let simmer for about 90 minutes until beef is tender. Skim off any foam during cooking.
  4. Add chopped garlic, soy sauce, and sea salt to taste; stir gently.
  5. Serve hot, garnished with sliced radish and additional green onions or leeks.
