Ingredients

  • 2 large sweet potatoes (about 1.5 lbs), peeled and thinly sliced
  • 4 cups kale, stems removed and chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, grated
  • Ground nutmeg, salt, and black pepper to taste
  • Olive oil for greasing the baking dish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes.
  3. Sauté the chopped kale in a skillet over medium heat with a splash of water or olive oil until wilted (about 5-7 minutes).
  4. Grease a 9×13 inch baking dish with olive oil.
  5. Layer sweet potato slices, sautéed kale, heavy cream, and Gruyère cheese in the baking dish until all ingredients are used.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove foil and bake for an additional 20-25 minutes until golden brown.
  8. Allow to cool for about 10 minutes before serving.
