  • 1 cup apple (Gala or Golden Delicious recommended)
  • 1 tbsp olive oil
  • 1 shallot (chopped)
  • 3 1/2 cups low sodium vegetable broth
  • 1/8 tsp fresh nutmeg
  • 1/4 tsp cinnamon
  • Pinch kosher salt
  • Maple syrup (optional)

Instructions

  1. Heat olive oil in a medium-size soup pan over medium heat until shimmering.
  2. Sauté shallots until translucent, about 3-4 minutes.
  3. Add sweet potatoes and apples with a pinch of salt; sauté for another 3 minutes.
  4. Pour in enough vegetable broth to cover the vegetables completely.
  5. Bring to a simmer and cook until tender, about 15-20 minutes.
  6. Blend the soup until smooth using an immersion blender; add more broth if needed for desired consistency.
  7. Stir in nutmeg and cinnamon; adjust seasonings to taste before serving warm.
