  • 4 yellow plantains
  • 1 lb ground beef
  • ½ medium onion
  • 2 garlic cloves
  • ½ green bell pepper
  • ½ red bell pepper
  • 2 tbsp avocado oil (separated)
  • ¼ cup tomato sauce
  • ¼ cup beef broth
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • 1 tbsp adobo seasoning
  • ¼½ tsp cayenne pepper

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Cut both ends off each plantain and score the skin lengthwise.
  3. Coat scored plantains with avocado oil, roast for 30 minutes, flipping halfway through.
  4. In a skillet, heat oil over medium heat; sauté onion, garlic, and peppers until softened.
  5. Increase heat to medium-high; add ground beef and cook until browned.
  6. Stir in seasonings, tomato sauce, and broth; simmer until liquid is reduced.
  7. Remove roasted plantains from the oven; cut lengthwise without cutting through.
  8. Stuff each plantain with the beef mixture before serving.
