  • 3 tablespoons pureed strawberries
  • 8 oz cream cheese, softened
  • 34 cups powdered sugar

Instructions

  1. In a mixing bowl, beat softened butter with an electric mixer until smooth. Add the egg and vanilla extract; mix until combined.
  2. Gradually add the strawberry cake mix and blend until fully incorporated. Chill dough in the refrigerator for at least one hour.
  3. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  4. Form chilled dough into balls about 2 inches wide and space them on the baking sheet.
  5. Bake for 10 minutes, then cool on the pan for a few minutes before transferring to a wire rack.
  6. In another bowl, beat together pureed strawberries and cream cheese until smooth. Gradually mix in powdered sugar until desired sweetness is achieved.
  7. Spread filling on half of the cookies and top with remaining cookies to create sandwiches.
