  • ¾ cup plus 2 tbsp all-purpose flour

  • 6 tbsp salted butter, melted (or add a pinch of salt with unsalted butter)

  • ¾ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs, at room temperature

  • 1 â…“ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • â…“ cup milk
  • 3 cups chopped fresh strawberries
  • 1 ½ tbsp all-purpose flour
  • 1 tbsp granulated sugar

Instructions

  1. Preheat your oven to 350°F. Line an 8×8-inch metal baking pan with parchment paper, leaving a 2-inch overhang on each side.
  2. In a medium bowl, combine ¾ cup all-purpose flour, 2 tbsp packed light brown sugar, and ¼ tsp salt (if using unsalted butter). Whisk these together until there are no lumps. Add in melted butter and stir until combined. Use your fingers to form large crumbs. Cover with a tea towel and set aside.
  3. In another medium mixing bowl, mix together 6 tbsp melted butter, ¾ cup granulated sugar, and 1 tsp vanilla extract. Whisk until pale and fluffy. Add eggs one at a time until the mixture is light and creamy. Mix in sour cream.
  4. In a small bowl, sift together 1 ⅓ cups all-purpose flour, 1 ½ tsp baking powder, and ¼ tsp salt. Fold this dry mixture into the wet ingredients using a spatula until mostly incorporated. Pour in milk and fold until evenly blended. Spread this batter into your prepared pan.
  5. In a bowl, combine 1 ½ tbsp all-purpose flour and 1 tbsp granulated sugar. Toss this mixture over 3 cups chopped fresh strawberries until coated. Scatter strawberries evenly over the batter followed by clumps of crumb topping.
  6. Bake in your preheated oven for about 40–50 minutes or until crumbs are lightly golden and firm to touch. A toothpick inserted in the center should come out clean without wet batter. Allow cooling on a wire rack for at least 30 minutes before serving.
