  • 100g unsalted butter, softened
  • 80g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons strawberry powder or freeze-dried strawberries, crushed
  • 250g cream cheese
  • 150ml heavy cream
  • 300g fresh strawberries, sliced
  • 3 tablespoons strawberry jam
  • 1 tablespoon water
  • Shortbread cookie crumbs for garnish

Instructions

  1. Cream together the butter and sugar until fluffy. Mix in the egg and vanilla extract.
  2. Add the strawberry powder, followed by the flour and salt until just combined.
  3. Shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat your oven to 350°F (175°C). Roll out dough to about 1/4 inch thick and cut into boat shapes.
  5. Create indentations in each cut-out cookie and bake for 12-15 minutes until set.
  6. For the filling, beat cream cheese, heavy cream, powdered sugar, and vanilla until thickened.
  7. Assemble by piping cream into cooled cookies; top with sliced strawberries brushed with heated strawberry jam.
