  • 500 g strawberries (fresh or frozen)
  • 50 g granulated sugar
  • 1 tablespoon water
  • 190 g all-purpose flour
  • 75 g natural cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (melted)
  • 100 g light-tasting oil
  • 100 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved for decoration)

Instructions

  1. Prepare the strawberries: Cook strawberries with sugar and water over medium heat until thickened into a jam-like consistency. Cool before use.
  2. Mix dry ingredients: Whisk together flour, cocoa powder, baking powder, baking soda, and salt in one bowl.
  3. Combine wet ingredients: In another bowl, mix melted butter, oils, sugars, eggs, and milk until smooth.
  4. Combine mixtures: Gradually add the dry mixture to the wet ingredients until fully combined. Fold in half of the strawberry mixture.
  5. Bake: Divide batter between greased round pans and bake at 350°F (175°C) for about 60 minutes or until a toothpick comes out clean.
  6. Cool & frost: Let cakes cool before frosting with whipped cream cheese mixed with powdered sugar and vanilla.
  7. Assemble & decorate: Layer cake with remaining strawberry mixture and top with halved strawberries.
