  • 6 small flour tortillas
  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream
  • 1 cup fresh or frozen strawberries, chopped
  • ¼ cup granulated sugar (for the topping)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat oven to 375°F (190°C). Mix the sugar and cinnamon in a small bowl.
  2. Brush each tortilla with melted butter and coat with the cinnamon-sugar mix.
  3. Shape tortillas over an oven rack or inverted muffin tin and bake for 8–10 minutes until crisp. Cool completely.
  4. For the filling, beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream separately, then fold into the cheese mixture.
  5. In a saucepan, combine strawberries, sugar, and lemon juice; simmer for about 5 minutes. Add cornstarch slurry and stir until thickened; let cool.
  6. Fill cooled taco shells with cheesecake mixture and top with strawberry sauce before serving.
