  • 1 Tbsp. cornstarch
  • 2 Tbsp. cold water
  • 2 cups frozen, sliced strawberries
  • 2 Tbsp. brown sugar, packed
  • 2 Tbsp. granulated sugar
  • 1 Tbsp. lemon juice (fresh or bottled)
  • 4 oz. cream cheese, softened
  • 1/2 cup icing sugar
  • 1 cup plus 2 Tbsp. heavy cream, chilled
  • Fresh strawberries, sliced
  • Icing sugar, sifted over
  • Croissant dough (store-bought or homemade)

Instructions

  1. Prepare the strawberry filling by mixing cornstarch with cold water. In a saucepan over medium heat, combine strawberries, sugars, lemon juice, and the cornstarch mixture. Cook until thickened, then cool.
  2. In another bowl, beat softened cream cheese with icing sugar until creamy.
  3. Whip chilled heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
  4. Roll out pastry dough and cut into triangles. Spread cream cheese mixture and spoon strawberry filling onto each triangle before rolling them up.
  5. Bake on a lined baking sheet according to package instructions until golden brown.
  6. Serve dusted with icing sugar and topped with fresh strawberries.
