  • 2 tablespoons all-purpose flour
  • 2 tablespoons Worcestershire sauce
  • 4 cups beef stock
  • 4 large carrots (roughly chopped)
  • 3 medium Yukon gold potatoes (cut into cubes)
  • 2 stalks celery (chopped)
  • 1/4 cup finely chopped yellow onion
  • 8 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons roast beef base paste (like Better than Bouillon)
  • 2/3 cup red cooking apple vinegar
  • Bunch of fresh herbs (rosemary, thyme, bay leaf – about 2 sprigs each)
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. In a bowl, mix flour, Worcestershire sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper. Coat the beef cubes in this mixture.
  2. Heat vegetable oil in a Dutch oven over medium-high heat. Sear the beef until golden brown on all sides; remove and set aside.
  3. In the same pot, sauté chopped celery, onions, and garlic until softened. Stir in tomato paste and roast beef base; simmer briefly.
  4. Add beef stock and vinegar along with fresh herbs; stir to combine. Reduce heat to medium-low and simmer for 2 hours.
  5. Add carrots and potatoes; continue cooking for another 30-45 minutes until vegetables are tender.
  6. Serve warm with your choice of rice or bread.
