  • 150g sirloin or ribeye steak
  • 2 large eggs
  • Sliced avocado
  • Halved cherry tomatoes
  • 1 tbsp olive oil or butter
  • Salt & freshly cracked black pepper
  • Fresh parsley for garnish

Instructions

  1. Pat the steak dry and season generously with salt and pepper.
  2. Heat olive oil or butter in a skillet over high heat; sear the steak for 2-3 minutes per side (medium-rare) before resting for 5 minutes.
  3. Lower heat to medium, add more oil/butter if needed, then crack in the eggs and cook until whites are set but yolks remain runny (2-3 minutes).
  4. Slice the rested steak and arrange it in a bowl alongside avocado slices and halved cherry tomatoes. Top with sunny-side-up eggs.
  5. Garnish with chopped parsley, salt, and pepper, then serve immediately.
