  • 10 tbsp butter
  • 1 1/2 cups dark chocolate chips
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs (room temperature)
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 20 oz semi-sweet chocolate chips (for coating)
  • 1 tbsp coconut oil
  • 1 cup powdered sugar
  • 23 tbsp heavy cream, to thin
  • Candy eyes

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9 x 9 inch baking pan with parchment paper.
  2. In a microwave-safe bowl, melt butter and dark chocolate chips together until smooth.
  3. Whisk in sugars until dissolved. Beat eggs until frothy, then mix into the chocolate mixture along with vanilla.
  4. Fold in flour and cocoa powder, then stir in remaining chocolate chips.
  5. Spread batter into the prepared pan and bake for 25–30 minutes until a toothpick comes out with a few moist crumbs.
  6. Cool completely before cutting into squares; freeze for about 15 minutes to firm up.
  7. Melt semi-sweet chocolate chips with coconut oil and dip chilled brownies to coat evenly.
  8. Whisk powdered sugar with heavy cream for icing; pipe onto brownies in crisscross patterns and add candy eyes.
