  • 1/2 package phyllo dough
  • 2 tbsp olive oil
  • 1 cup fresh spinach
  • 1/2 cup chopped artichoke hearts
  • 4 oz cream cheese
  • 1/4 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté chopped spinach in a pan over medium heat until wilted (about 2–3 minutes). Set aside.
  3. In a mixing bowl, combine cream cheese, sour cream, mozzarella cheese, Parmesan cheese, garlic, wilted spinach, and artichokes. Season with salt and pepper.
  4. Layer phyllo dough sheets (4–5) brushed with olive oil. Cut into squares and press into muffin tins.
  5. Fill each phyllo cup with the mixture.
  6. Bake for 18–20 minutes until cups are golden brown and filling is bubbly.
  7. Allow to cool slightly before serving.
