  • 2 lbs lamb shoulder, cut into cubes
  • 2 tablespoons oil (vegetable or ghee)
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 1 cup crushed tomatoes
  • 1 cup beef or lamb broth
  • 1/2 cup full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. In a cast iron pot over medium heat, heat oil and sauté the chopped onion until golden brown (about 5-7 minutes). Add minced garlic and grated ginger; cook for an additional 2 minutes.
  2. Stir in the spices: Madras curry powder, turmeric, cayenne pepper (if desired), ground cumin, smoked paprika, and ground cinnamon. Cook for about 2 minutes.
  3. Add cubed lamb shoulder to the pot and sear until browned on all sides (about 5 minutes).
  4. Pour in crushed tomatoes along with tomato paste and broth; stir well and bring to a gentle simmer.
  5. Cover the pot, reduce heat to low, and let it simmer for approximately 1.5 hours until the lamb is tender. Stir occasionally. In the last 10 minutes of cooking, stir in coconut milk and season with salt and pepper before serving.
