  • 28 ounces fire-roasted diced tomatoes
  • 2 cups long-grain white rice
  • 6 cups chicken broth
  • 1 tablespoon Cajun seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • Chopped green onions for garnish
  • Chopped parsley for garnish
  • Red chili flakes for garnish
  • 3 dried bay leaves

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chicken; cook until browned.
  2. Stir in chopped onion, bell pepper, and celery; sauté until softened.
  3. Add garlic; cook until fragrant.
  4. Sprinkle in Cajun seasonings, thyme, oregano, salt, and pepper; stir for about 30 seconds.
  5. Combine rice, broth, and tomatoes; bring to a boil. Add bay leaves.
  6. Reduce heat to low; cover and simmer for 25-30 minutes until rice is tender.
  7. Remove bay leaves; garnish with chopped green onions and parsley before serving.
