  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 6 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. Heat olive oil in a skillet over medium heat. Toss chicken cubes with paprika, garlic powder, chili powder, salt, and pepper. Cook for about 5-6 minutes until browned and fully cooked (internal temperature of 165°F).
  2. In a mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper. Toss well and chill.
  3. Assemble the bowl by layering cooked rice at the bottom, then adding spinach (if using), grilled chicken cubes, avocado slices, and cucumber salad on top. Drizzle with spicy mayo.
