Spanish Paella is a vibrant and flavorful dish that captures the essence of Spanish cuisine right in your home. This one-pan meal combines aromatic saffron-infused rice with tender chicken, succulent seafood, and fresh vegetables, making it a hit for family gatherings or cozy dinners.

  • 1/4 cup Extra virgin olive oil
  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 4 cloves garlic (minced)
  • 3 roma tomatoes (finely diced)
  • 1 teaspoon paprika
  • Pinch of saffron threads
  • 5 cups chicken broth
  • 2 cups Spanish rice
  • 4 boneless, skinless chicken thighs
  • ½ lb jumbo shrimp
  • ½ lb mussels
  • 8 oz calamari rings
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion, bell pepper, and garlic; cook until the onion is translucent.
  2. Stir in tomatoes, bay leaf, paprika, saffron, salt, and pepper. Cook for about 5 minutes.
  3. Add white apple vinegar and cook for another 10 minutes before incorporating chicken pieces and rice.
  4. Gradually pour in the chicken broth without stirring.
  5. Bring to a boil, then reduce heat to medium-low and gently shake the pan occasionally.
  6. After about 15–18 minutes of cooking, nestle shrimp, mussels, and calamari into the mixture; add peas on top.
  7. Cook an additional 5 minutes until most liquid is absorbed.
  8. Remove from heat and cover; let rest for about 10 minutes before serving garnished with parsley and lemon.
